From what I understand of it, it mostly nudges things along faster than what time would naturally do. So things like scrapes and bruises simply go through its healing process quicker and broken bones are set back into proper place, etc etc.

The nuances are beyond me, however. I've watched Anders in his clinic and even he can't fix every single disease and sickness out there.
It'd be far too easy if it was. I'm sure for mages who are more specialized in healing, their gifts can do more but the amount of mana it takes to do it must be enormous.
